RHEA, a recruitment agency specializing in Hospitality and Culinary Arts, is seeking a:
Executive Chef – Fine Dining Restaurant – 2 Michelin Stars with ambitions to achieve the 3rd Star
Location: Paris
General Objective:
Join a prestigious fine dining restaurant recognized by the Michelin Guide, with the goal of maintaining and elevating culinary excellence. Your main mission will be to lead and structure a talented brigade, ensure consistency in dish quality, and support the establishment in achieving its innovation and profitability objectives.

The Establishment:
- Fine dining restaurant with 2 Michelin Stars
- Capacity: 30 seats in the main dining room, a Chef’s table for 6 guests, and two private dining rooms (22 and 6 guests)
- Open 5 days a week with 4 weeks of annual closure
Main Responsibilities:
Team Management:
- Supervise a team of 14 in the kitchen and 6 in pastry.
- Oversee recruitment, training, motivation, and team stability.
Culinary Excellence:
- Ensure consistency and quality in all dishes.
- Develop menus and dishes in collaboration with the culinary direction, aiming for the prestigious 3rd Michelin Star.
Operational Management:
- Optimize purchasing and inventory to maintain a food cost of 28%.
- Oversee kitchen equipment, installations, and cleaning processes.
Internal Collaborations:
- Work in synergy with front-of-house, pastry, sommeliers, HR, communication, and accounting teams.
- Maintain clear and effective communication between teams and management.
Creation and Innovation:
- Propose new recipes and techniques while adhering to the culinary philosophy of the establishment.
- Actively participate in R&D initiatives and train the team on new dishes.
Profile Sought:
- Proven experience as a Chef or Senior Sous-Chef in 2* or 3* Michelin-starred establishments.
- Exemplary leadership, humility, team spirit, and adaptability.
- Expertise in product knowledge, high-end client expectations, and operational challenges.
- International experience is a plus.
Personal Qualities: Honesty, respect, commitment, and openness to feedback.
Professional Skills: Culinary expertise, communication, innovation, and management.
Conditions:
- Permanent contract with an attractive net salary of €4,500–5,000 per month.
- Two consecutive days off per week.
- Start date: ASAP
