High-end hospitality and restaurant recruitment agency is looking for:

Production Chef (M/F) in Paris

A responsible catering service offering tailor-made events: cocktails, dinners, and catering for Haute-Couture houses as well as private events, shootings, filming, prep days, fashion shows, and showrooms. Formats include breakfast, lunch, craft services, and dinner, always in a conscious and responsible manner.

Team:

7-10 permanent staff, increasing to 30 depending on the events

Missions

As a Production Chef, you will be responsible for directly supervising the culinary operations of our savory department within our event catering company. You will work closely with the Executive Chef and the Pastry Chef to ensure smooth and efficient execution of the menus offered to our clients.

Responsibilities

Kitchen Planning

  • Collaborate with the kitchen and pastry managers to design menus.
  • Organize and plan daily preparation tasks in the savory department.

Production Supervision

  • Lead and supervise the kitchen team in the savory department.
  • Ensure the quality of prepared dishes and adherence to hygiene and food safety standards (HACCP).

Stock Management

  • Order fresh products and special ingredients based on the needs of each event, in collaboration with the kitchen and pastry managers.
  • Supervise the receipt and storage of ordered goods.

Culinary Creativity

  • Develop new recipes and culinary concepts for the savory department, in harmony with the pastry department’s offerings.

Production Management

  • Plan and oversee production for each event.
  • Optimize the use of kitchen equipment and distribute tasks equitably among team members.
  • Assist the savory team in their daily production.
  • Ensure compliance with ratios.

Training and Supervision

  • Train and supervise the kitchen staff in the savory department.
  • Organize regular training sessions to improve skills and maintain high-quality standards.

Desired Profile

  • Strong culinary skills with proven experience in managing food production.
  • Ability to work under pressure and meet strict deadlines while maintaining high standards of quality.
  • Excellent leadership and team management skills.
  • Exceptional communication and problem-solving skills.
  • In-depth knowledge of hygiene and food safety standards.

Conditions

  • Schedule: Mostly day shifts from 8 AM to 4 PM, without breaks (flexibility for evening shifts as per the schedule)
  • Contract: 39 hours/week (overtime compensated)
  • Salary: 3200€ gross/month (depending on experience)
  • Annual bonus based on revenue
  • Days off: Two consecutive days off, either Friday-Saturday, Saturday-Sunday, or Sunday-Monday
