HEAD BAKERS (M/F) – USA

Locations: Miami, San Francisco, New York, Los Angeles

Our pastry shops, designed as neighborhood stores, offer a collection of pastries, viennoiseries, breads, brunches, and a culinary range that combines tradition and modernity.

Key Responsibilities under the guidance of the Executive Pastry Chef:

  • Oversee and supervise bakery production.
  • Manage a team of 8 people daily.
  • Participate actively in bread preparation and viennoiserie baking.
  • Apply and ensure production guidelines are followed.
  • Maintain clear communication with other teams and services.
  • Train and support team members daily.
  • Collaborate with the Executive Pastry Chef on staff scheduling.
  • Ensure hygiene standards and HACCP procedures are respected.
  • Master the use of equipment: mixers, weighing, dividing, shaping, baking in hearth ovens, and ventilation.
  • Lead and produce viennoiseries using a dough sheeter.

Desired Profile:

Passionate about baking, you ideally have solid experience in a similar position and enjoy working as part of a team. Your professional and personal experiences will enable you to bring technical expertise and positive energy to the store.

Your Strengths:

  • Genuine passion for the craft and contagious energy.
  • Mastery of flour characteristics and baking production processes.
  • Experience with mechanical mixers and cleaning equipment.
  • Proven managerial skills.

Contribute to R&D development projects.

As Head Baker, you will:

  • Be responsible for the daily production of the team, which will grow from 4 to 7/8 people.
  • Prepare and bake a wide range of bakery products, including bread and viennoiseries.
  • Ensure consistent quality and freshness while adhering to hygiene standards.
  • Manage stock and ingredient orders necessary for production.
  • Clean and maintain production equipment.

Qualifications:

  • Minimum 3 years of experience in baking and at least 1 year as Head Baker or Production Manager.
  • Strong knowledge of food hygiene standards.
  • Ability to work in a fast-paced environment and meet deadlines.
  • Attention to detail to ensure the quality of finished products.

Preferred Profile:

  • Experience in day or night bakery shifts, with the ability to handle high volume production, acquired in bakeries such as Paul, Eric Kayser, Boulangerie Ange, Louise, Sophie Lebreuilly, or similar.
  • Significant experience in store/lab (not necessarily in hospitality).
